It's my birthday tomorrow
I'll be eating alone, but I'd like to cook something delicious.

Any suggestions?
I can cook most things but I don't like baking.

You are not going to get brown stock*, but a decent quality fresh stock from your butcher/deli will still be good. Everything else can be got easily and at a moment's notice. All these recipes scale down to 1 and/or keep for leftover day.

* a proper brown stock is made by boiling beef bones all day, then using that stock to repeatedly glaze a bunch of nice meat until all the goodness has been extracted from it. It's not really practical to do outside a restaurant kitchen where you have bones anyway and the oven is on for 12 hours anyway.

First of all. Happy birthday, OP. a Nice thick steak with mashed potatoes and sauteed vegetables to deglaze the pan, a bottle of good quality red wine and if you have a cake shop nearby grab a couple of mini cakes to have with (optional) Riesling.
