So I just got out of relationship, watched a lot of anime before it but she didn’t care for it.

Popular stuff from the last decade or so that’s a good place to start looking (seeing as how you have a lot of 00s staples listed there, these are 10s staples) are OPM, Madoka (saw you said you’d watched that, I also recommend Rebellion if you haven’t seen it), Rebuild of Evangelion, SnK/Attack on Titan, One Punch Man, Kaguya (if you don’t like romcoms you won’t like this), Tatami Galaxy (this might sting a bit if you’re coming off a long relationship, also a possible skip), Demon Hunter, Mob Psycho, those are kind of a who’s who of what’s been big in that interval. Probably JoJo too I guess?

As far as stuff you might specifically like that’s not really as culture-defining as the aforementioned, Princess Principal kinda feels like a moe Black Lagoon set in steampunk Britain and is really good. You’ll probably also like Psycho Pass, cyberpunk action thriller, I can only vouch for S1 though, heard S2 was iffy. There’s also Fate/Zero which you probably already have seen.

Oh, also you’ll probably like Kabaneri of the Iron Fortress, give that a shot. I think it’s still on Prime Video if you have it & there’s a sequel film either there or on Netflix.

Psycho pass is future crime, yup. Rebellion has a really fantastic gun-fu battle you’ll probably love if you like gun stuff. Also definitely take a look at Princess Principal, I know it looks like moeshit but it’s actually an action/espionage thriller with a great OST, I was really pleasantly surprised by how fun it is.
