what i'm saying is that i'm sure the broth will be the difference. not because they have some broth artisans or special techniques, but because nobody is going to spend hours assembling a broth at home. i don't think ramen in japan is likely that different from ramen in the US, but there aren't really restaurants that have ramen at all around me so i've only ever had the instant kind which is obviously going to be different
