i wouldn't eat cheese from a can if it were just recently dispensed out of whatever stainless steel nozzle it came from into a freshly sterilized plastic-coated steel vessel.
That said, expiration dates on pasteurized, canned goods are a scam to get you to spend more money. It's fine.
