East coast has too many jelly fish that make it impossible to enter the water, maybe it's different around Busan but I've never been there so I can't say. Beaches at Incheon are popular because they're the only viable beaches in the mainland of the country, pretty sure they're shit too though. Jeju Island is ok but is marketed as being like Hawai'i which is absolutely false.

A lot of those things are meant to be enjoyed as a couple, so if you don't have a gf to go with you you'll feel out of place, and if you have a korean gf everyone will stare at you because they still don't like mixed-race couples there (rightfully). Don't get a Korean gf because the ones who date white men are usually insane and will be driven more insane by the fact everyone stares at you everywhere, and that she has to lead you through everything.
Best time of year to visit SK is first/second week of april because cherry blossoms, you will not be able to avoid tourists and everything you want to do will be extremely crowded because that's the only time of year with good weather. Summer is monsoon season, winter is cold as fuck, mid-fall is OK.
