Afterall Rei does not eat meat not for a spiritual reason (like could be for a vegetarian/vegan) but simply because she does not like meat, it taste and texture. Who knows at this point we can just speculate. Really, Anno gave very few insights about how Rei sees animal. In rebuild instead we have some interactions (rei and stray cats, she shows some affection) but again it's another Rei.
