asuka is actually a very caring person to begin with and up till about episode 18 she opens up a lot and becomes very friendly, compassionate and just generally a nice person (possibly the genuinely nicest in the show). it's only after a few traumatic experiences and shinji continually being a cunt to her specifically that she becomes caloused. if you think asuka is the most annoying character you clearly haven't actually paid any attention to the cast. misato and shinji continually use people for their own gain and do little if anything to show gratitude or kindness to others. even rei only ever attacks people or at best passively stands by and does nothing for others (she said "thank you" once, i guess?)
but asuka even goes out of her way to prepare lunches for shinji, invite rei around for parties, go on dates to please hikari, offer advice to people, and so on. she's actually the (morally) best chatacter in the show and only snaps after losing the one thing she really had that others would recognise her for. it's tragic how kuch effort asuka put into the people around her only to be utterly discarded when her usefulness ran out.
