As for the games, it's best if you play them chronologically from Touhou 6 upwards, as the games get more complex and unforgiving later down the line. As a piece of advice for a newbie, never play in easy mode. The games will kick your ass and winding down the difficulty will seem tempting, but it's almost unanimously reccomended that you must always get familiar with the games' controls and mechanics in normal mode at the very least.
I haven't watched Owari no Seraph but I'm familiar with Shinoa from how frequently she gets posted around in /a/.
