We've also seen her hold her own when drinking in Zero, get tipsy in Carnival Phantasm, and smashed so bad she ends up roaring like a lion in HA (although that one hardly counts desu, kek). It could honestly go either way.
And I could totally see her getting a little overly agressive if her inhibitions drop low enough, specially if there's any sort of competition going on, or even just keeping up with somebody else's drinking.
What I feel I can totally tell, no matter if she'd get really feisty, clingy or giddy, is that she'd definitely be the type of girl you're gonna have to keep an eye on if she truly ends up three sheets to the wind. I don't think the ever martial King of Knights would take losing control over her senses (and her abilities as a servant) all that well, and it would be up to her drinking buddies to keep her out of trouble.
I'm also sure it'd be incredibly adorable to witness too: a blushy, tottering Seiba talking about being your Sword in a slightly slurred speech. Well, if she doesn't summon Ekusukariba and lazers a couple of blocks off the map that is.
