the whole point of the rebuilds is made clear in the last movie, and the point anno was making is "eva was never that deep and you guys REALLY need to move on"
you gotta remember he made the series as an outlet for his post-nadja depression, but it only made it much worse until he took a break from anime in general and realised it doesnt need to be deep it only needs to be cool and fun, and then made EoE. but people didnt understand that's what he meant, so he went even deeper into the mental fuck of trying to get his point across that anime doesn't need to be deep to be entertaining.
the last 2 movies really drove home the point (by filling them with intentional gibberish) that people (and anno himself) need to move on from evangelion specifically.
and as much as I love Asuka, the other main point the last movie really cemented is that Asuka was always a stand-in for anno's first GF that he needed to move on from to actually find happiness rather than dwelling on the past. which was the whole message of Eva - don't dwell on the past (good or bad) and go the fuck outside
tl;dr the rebuilds are the better half of evangelion and the whole point of the series was "fun things are fun and you're thinking too hard"
