If the self-insert is interesting enough it makes the relationship way more fulfilling to take part in. We're also able to see how our waifu would actually act in a relationship instead of just relying on our imagination which can lead to mischaracterization. I think people with canon relationships in their waifu's source material are lucky.
At the risk of offending people, I think people only find self-inserting bad when they think themselves significantly inferior to the MCs which they would have to self-insert as. I'm just as attractive if not more so than Shirou but probably am not as noble or nice as he is.
