While the other two do a good job, Jun Mizusawa will always be Sheik's true seiyuu in my mind. This is what Sheik should sound like. So I will answer this question just accounting for Jun.

In OoT, Jun has also voiced Malon, Ruto, and Saria. The only other ones I am aware of are Maki from the first Persona and Wraph from Popful Mail (the Japanese dub of course for both).
I don't want to get into how Zelda is different from Sheik since I've made many posts about this in the past, but just know they are different for the most part personality-wise, though not completely. Saria, Ruto, and Malon are all cheery types, especially when they are around Link. Although Saria does get a bit depressed seeing Link leave. These three are pretty different from Sheik. Wraph seems to be the overconfident and cocky type, which is very different from Sheik. Like the exact opposite. Maki is a 'serene, quiet girl' according to her wiki page at least. If that's true, then that is relatively similar to Sheik. Although, Maki's backstory and character seem to be more complicated than what I just described though.

I think she would get along well with Malon, Saria, and especially Ruto. Two of them are sages, and she helped save Ruto's life before and even earned Ruto's gratitude. Sheik cannot be around if Zelda is conscious, so them getting along isn't something that would even matter.
