This is actually a pretty great idea! This removes many of the problems I have with other options! I don't want to have to say this since it is a great and novel idea, BUT there is a major problem with this idea.
You see, there is only one triforce of wisdom. It cannot be cloned. If it could, Nintendo would have used that as a story idea already. If you could do that, why wouldn't Ganon clone his triforce of power constantly?
Sheik, since her creation and in every iteration she is in, has the triforce of wisdom. It was entrusted to Zelda's Royal Family for generations. This is a major part of Zelda's life, upbringing, and her amazing wisdom. All of this applies to Sheik as well. Without having access to that triforce, there is no telling how much that could change Sheik. She would certainly be weaker. She would also probably lose a good chunk of her wisdom. Her stealth capabilities would diminish greatly since it requires smarts to be able to stay hidden all the time and to sneak from someone right under their nose. Her intellect is one of the many reasons I love her so much. Sure, without the triforce of wisdom, she would still be plenty smart and such. But she wouldn't be Sheik smart.
You could try to make the argument that the clone would continue to live out as Zelda, while the original Zelda decides to stay as Sheik forever. This creates its own problems. If Princess Zelda, does not own the triforce of wisdom, how can she be expected to pass it down to future Kings and Queens of Hyrule? How can she rule with as much wisdom that she would be expected to have without that triforce? At the very least, she would be at a major disadvantage compared to her ancestors.
