She is a peaceful girl. So her perfect ideal would be a peaceful world, at least as peaceful as possible. I'm sure she would fight hard for it again if need be. She wouldn't sit back and watch the world crumble to pieces. She is a fighter, for peace.

However, I think we can see hints of her not only being proud of Link, but herself when Link completes the Water Temple. Sheik had helped Link along the way and also saved Ruto earlier. So when Link told Sheik that Ruto wanted to thank her and the area starts looking normal again, you can tell she is happier than normal. Most of her sentences end in exclamation points and she is a bit more talkative about her ideal of fighting for peace. So I think Sheik is proud of herself deep down. It is such a cute cutscene!
