The voices are ripped from the PSP version, which is only rated CERO C (15+) for some reason. The drinking itself isn't only specific to Rin as Sakura/Saber and possibly even Ilya seem to do it as well. I think Shirou is the only one who rightfully abstains, well until his life gets turned upside down by our cute little devil that is.
Tsukihime R is rated CERO Z by the way so there's not much fear of any scene getting censored, unless underage drinking is as big of a no-no in Japanese society as narcotics.
