The only thing I'm not 100% sure of is whether she will remember anything she previously went through. I would like to believe that she does, but if she doesn't, then HW Sheik would actually be a different Sheik than the one I fell in love with. The only thing that makes HW and OoT Sheik the same in my mind is the memories she made when she was part of what happened in OoT. Otherwise, her personality would change.
I will always assume she can remember those things however.

For one, there is nothing stating that the triforce could not let Sheik have her own body or that her vessel needs to be the one wielding the triforce. Since the triforce of wisdom is one of the three important aspects about her, she cannot be the same Sheik without it.
The second major instance would be if Sheik inhabited a body of someone very different from Zelda. You see, Zelda in her many iterations, can be a bit different. However, they are not THAT different from each other, especially OoT and HW respective Zeldas. If Sheik can inhabit someone pretty similar to her previous vessels, her personality wouldn't change that much assuming she can still remember her own past like I said before. If someone who was the polar opposite of Zelda became a vessel of Sheik, I'm sure it would corrupt her personality enough that I would say she is a different person.
>memories go the other way aroundAbsolutely. Zelda in both OoT and HW shows a clear understanding that they remember what Sheik remembers in her body. In HW for example, Zelda finishes a sentence that Sheik said right before she transformed.
