As for the writing on top, a few tips. I think this is what you did wrong with the icing. I'm a Brit, so I may be using different terms to what you're used to but hopefully you will understand.
Did you use butter icing? If you did, don't. The best icing to use is Royal Icing, it's what they use in wedding cakes, it sets hard and is usually very sweet. In the UK you can buy this ready made and then cut out letters with a knife. If you are making it your self and using a piping tool, make it up to the pack instructions and then water it down with water, drip by drip until it is soft enough to pipe. I'm shit at piping icing because of my hand tremor, so I cheat and use a mixture of whipping cream and royal icing sugar.
