Obviously her birthday isn't brought up in the story because Nasu hadn't arbitrarily decided on a date for it at the time, but it's perfectly in character for her to not acknowledge it in any way whatsoever. Magi aren't human, as she says. Celebrating birthdays is not a privilege she can afford. On the other hand though, Rin is a massive hedonist -- so it's probably more accurate to say that she doesn't celebrate them because she has no-one to celebrate with. If I ever write a Shirin fanfic, one of the chapters will focus on Shirou throwing his precious girl a surprise birthday party she hasn't had in over a decade.
