Saber as always had a very low view of herself as a woman, and at no point throughout the story does Saber not stop acting like an experienced warrior. A more bashful side to her, coming out after years of emotionally repression does not mitigate her other traits, nor does it make no sense. The clues were there from the start of the Fate Route, and are still there even during HF.
