The only people she shows any real subservience to are Nerv personnel under the command of Gendo, the only person to have shown any affection towards her in her entire life by the start of the show. Of course she's going to feel gratitude and great affection towards her father figure. It's natural that she'd want to do whatever she can to help him in return Compare this to how she slaps Shinji for chatting shit about him and completely ignores Asuka's approach on her first day of school. The doll she's made out to be wouldn't have the balls to do either of those.

She's just (literally and figuratively) a two dimensional character.Look at the situation in which she was raised, her adoptive father is the busiest man on earth, all her spare time needs to be devoted to training to pilot Eva, she lives alone in a dingy apartment. She's been dealing with the feeling that her soul is not her own. That's just not an environment that's going to foster a social butterfly. You're right that a lot of the time she's quiet it's from feeling she has nothing to say, but that's because she's devoted herself and her attention so strongly to her duties at Nerv. Things considered everyday topics of conversation to most people are just irrelevant to her.
