Since Sheik was just an alter-ego made for just the purpose of hiding from Ganon, Zelda is the proper and real one. Especially since she turns back into Zelda and would seemingly never become Sheik ever again since Sheik's role is filled. You could say they view Sheik as a mask of Zelda and Zelda is the true person behind the mask.
HOWEVER, I REFUTE THIS!
I will be using the sequel game, Majora's Mask, to illustrate the point I am going to make here. In Majora's Mask, Link obtains many masks. Three in particular are of importance: The Deku, Goron, and Zora. The one who is indeed wearing these masks and controlling the body is Link. However, these three masks are not just magical masks that grant Link new powers. When he wears these masks, his appearance changes drastically. Why is that? Well, these three masks contain three separate souls in them. We get to see the deceased souls who inhabit them and their tragic story. Link heals their souls and they provide a mask to Link with their body and powers in it.
If we were to discuss Link in his Zora form or his Goron form, would we say that he is simply Link? No. He is both Link and the Zora or he is both Link and the Goron.
I assert that Zelda uses a similar process using her triforce of wisdom to transform into Sheik. The only difference between this and the previous example I gave is that this is a new soul. A new creation, not an existing one. But I believe it is the same basic concept. If anything, I view Zelda just as just a part of Sheik. She is the vessel that is necessary for Sheik to take form. Not the other way around. The soul created by the triforce of wisdom is the real Sheik.
