It is also pretty clear that Sheik's creation had some major inspiration from Impa and her clan. I bet Sheik also admires Link for being the hero of time and all. Both of these people had a strong influence on her, so she likely admires them above anyone else.
It isn't clear what happened to Impa, but most guess that she has passed away. There isn't much Sheik could do for her. For Link, Sheik helps him in his quest to defeat Ganon whenever she can. She was a great help!
Sheik and Link have different roles, so she wouldn't want to become like him. But she probably does think about Impa as she lives on. She probably views her as a good inspiration to live by.

I like Sheik in her Manga adaptation and in her various other video game appearances quite a lot. However, nothing could ever hold a candle to how I feel about her in OoT. She is just so perfect there. I love her so much!
