I would probably save up and buy a compact Sony Camera with a full-frame sensor, interchangeable lenses, S-LOG support and 4K capabilities for her, she would love it! Or, if she already had a good camera, a new lens.
But honestly, I think she would be happy with any kind of gift, seeing as she probably didn't get any the past few years of living all alone without any family around. Not sure if her mother/father would send her a gift or if they are even still in the picture. Same goes for our anniversary, I think I rather would take her on a lovely date and make memories to remember by than to get her a gift. Perhaps something small like jewellery that she'd like.
