Really you cant go wrong with starting with whichever one of those you want, I would say IN is probably the easiest of the three.
EoSD however lacks some QoL changes in newer titles so playing it might feel weird if you play it after the others, I dont think its that big a deal desu
I'd say just try each one of those 3 and stick with whichever one you like the most. After that you can just play through all the other games however you want.
