It's about early spacefaring civilizations and all the gear that comes with that. It's not hard sci fi but it has some pretty good sci-fi elements. One of the first scenes in the 1979 anime is a military suit flying by an O'neill cylinder. The story tends to be a war between Earth and the space people who live in the Lagrange points. It's aged pretty well for such an old sci fi setting, with a notable absence of computers or powerful AI. Even in newer iterations, every machine, no matter how impressive, has a human operator.
Since it has a continuous story through the series and recurring characters it would be good to start with the original Mobile Suit Gundam. You can choose the tv series or the compilation movies. Some would say the movies are better, but if you're interested in anime history, the original is interesting. We have it to thank for modern mecha. IIRC it was the first serialized TV anime that told a continuous story rather than being mostly episodic. The second series, Zeta Gundam, is even better. My personal favorite is Turn A Gundam, though that's in a different setting.
As an Eva fan in particular, you might like Tomino's writing style quite a lot unless you were there for the girls. The most important characters are men.
