Student and DPE backlog is reduced, as every other student is also getting cold feet. Schools are begging for students, as opposed to students begging to get a slot at a flight school. I think going to get a dispatcher cert is a very good idea, especially if you can do so out of pocket. You may consider applying to ATC whenever the next hiring round is (idk, I don't follow it).
If anything, you should consider a PPL now, and even if you decide to do flight training and finance it all, don't waste time on CFI certs, stop at Commercial ASEL+AMEL. Definitely I like your dispatcher plan.
