Engineering a car from new parts is incredibly expensive.
If i want to build a table by glueing up new nice lumber, that's going to cost a lot.
Those things both require a lot of skill too.

Bicycles are similar to PCs in that they have about 10 important parts.
The real difference though is that almost everything, except with computers, is a finished technology. Bicycles were finished in the 1980s. That is 50 years ago.
Moore's law (the guy who invented intel) says that computers get twice as powerful every 2 years. Nothing else is like that.
With everything else, your cost effective way to do something to a high level, is by re-using materials. Simply buy a nice old bike and overhaul it and ride it.
