7 speed (14, 21 speed) is over 40 years old now.
'Ten speed' bikes, largely from the 70s boom era, are almost entirely old shitters, and are now even somewhat rare. They're completely redundant. And as terminology to just refer to old steel drop bar road bikes, incorrect and confusing.

Peak beater is a 90s road bike. Wide gearing is easy to achieve with a new cassette & chain, a reasonable part of a basic overhaul. Wider gearing is easy to achieve with a triple crankset, which will play nice with the downtube shifting.
