You snap the plastic crap all off, then drill through the head of the rivets, any large enough normal bit and a hand drill will do this, the metal they use is soft, then you can just hit them out with a punch and the chainrings will come off. You need to remove the crank arm to get the inner ring out in most cases.
easy to turn a 3x7 shitter into 1x7 (or 1x1 in this case)
I do this fairly regularly
but yeah, it will drop chains if you beat on it. I think it's mostly ok with a strong enough spring in the rear, but one of the reason cheap shitters have 3x is the fd acts as a idiotproof chain keeper.
also, on worn cranks, normally the middle ring is the worn one, so sometimes it's stupid to delete the good ones.
