How good are hydraulic V brakes? I want better brakes for my converted e bike, but want to keep the fork. The disc adapter I bought only fits on the rear. Should I get the Magura HS33 for both rims?

Magura makes good brakes, but be careful of the carbotexture levers.
That v-brake design looks damn beefy, and 2 of my older bikes I run a brake bridge on them just like those maguras.

If you already have a rear disk brake run that on the rear, and run the hs33 on the front.
If you only got an adapter it may be worth getting both hs33's and just running those.
Or just getting one for the front and see how good it is.

I have the adapter and it works just on the rear, but haven’t decided yet on what to do with the improved brake system. Both magura or one Magura in front and hydraulic disc in the back. It all pretty expensive so I can’t just buy one cause for the Magura I found a deal for $185 for 2.

Well hopefully you can find comparisons on these or other hydraulic vee brakes compared to disc.
Logically they should be better then normal vee brakes, question is how much.

The problem with V Brakes isn't the strength, it's the modulation. I don't think hydraulic ones would be much better unless it's wet

It's not hard to get a new fork Anon
If your bike has rim brakes it's probably old and/or trash and a new fork is good idea anyway
There is a reason no one makes disk adaptors for the front. You don't have to get anything fancy

Modulation is absolutely necessary when your brakes are extremely powerful and you don't need ANY effort to lock the wheels. Basically never the case when using road bike brakes from the hoods, the braking angle is so ineffective that I've never had brakes that would have too much stopping power.

With flat bar, v-brakes can be enough to necessiate a need for some modulation, especially with fresh pads, perfect adjustment and good stiff levers. There is a product for this, which is the power modulation noodle, though I have never used it and I've only heard bad things about it. Cantilevers have a smooth modulating lever feel due to the dynamic mechanical advantage, but also require more effort to lock the wheels. Perfect brakes would have indeed an dynamic mechanical advantage but also the effortless lever feel of hydraulics.

What kind of adapter you bought? If it's a v-brake to disc brake adapter, pay attention to your frame, it likely can't handle the braking force on the seatstay and ends up cracking. The just get the Maguras for both rims, though I'm sure you can get a new frame for the same price.

it's now more difficult to climb with bicycles, but being strong is way more useful then being a cyclist.

well V brakes are much more a case of hard on or not on at all so you can't trust them as much to slow you down exactly what you need to get around a corner, or to stop on gravel without locking up.
So in this case I don't think hydraulic will be much better because they clamp hard no problem

Trials riders use an angle grinder to make rims rougher to make them bite into the pads.
I tried old leaky hydraulic rim magura brakes several years ago on an old german city bike and they felt vaguer and weaker than v-brakes, but that's to be expected from their condition.

Thus he claims hydraulic v-brakes are too strong since they will be even worse at modulation.

Me? I have ridden at 150lbs all the way up to 230lbs.All the time my shimano xt v-brakes were easy to modulate when mountain biking. If anything 203+mm hydraulic disk brakes are the abrupt brakes, but those should be used for heavier riders or downhill/high speed descents.

If someone has issues modulating they should try riding more and getting used to the brakes, or being gentler on the lever.
For disk you can use organic pads, or get a smaller rotor.
For rims you could probably get shorter levers or just use one finger to brake.
Where I live we have hills + crowded bike trails so good brakes are nice.

Ya man I'd agree with you. I've had brakes that are nicer than others, but never have I even given a thought to whatever modulation is. If the brakes stop me and I don't have to pull very hard on the levers, we good.

yes, there is a spring inside to effectively limit the maximum braking force. It will prevent you from doing a frontflip but it does reduce your braking potential

The only real reason why you might need to readjust them is because of untrue wheels or moving cable housing.

So by "light lever feel" you mean mushy and spongy? Force multiplication is directly proportional to brake lever travel length, both for engagement and modulation.

pivot above rim bottom of the pad wears out first then the pad pops up into the tire and shreds it
pivot below rim the top of the pad wears out then the pad dives into the spokes

vee brake pads are very thin, so any error in their initial alinement dramatically cuts their life short, as do worn down brake bosses or excessively flimsy brake arms
cartridge pads alleviate some of these problems, but refills can be expensive
at least smooth post pads allow for some stupid adjustments that can avoid the need to true wheels
ultimate kek is adjusting pads to compensate for wheel hop
