Is it possible to 'overlock' your bike?
I'm worried bike thieves will assume my bike is worth more than it is if I have one or several heavy locks on it, making it a bigger target instead.
Is it better to just put a shitty lock on it to make it less conspicuous?
It's not like the expensive locks are any harder to crack.

add a cable to stop opportunists from running off with your front wheel.
maybe replace your quick-releases with locking pins.

if you're worried about conspicuity, just lock your bike near other bikes that are easier to steal.

Tldr if a place is safe, even a cable lock is fine.
Otherwise, u-lock + cable lock for the front wheel, anything more is overkill and will make cycling tiresome.
In the end, locks need to look intimidating. Unless you ride an s-works, the main kind of theives you're likely to encounter are drug addicts and niggers, so don't overspend on a lock that are incredibly difficult to pick. Most normies have a cable lock, with any u-lock you'll be a very unlikely target.
My u-lock has a very thick rubber sleeve that makes it look much bigger than it really is while remaining light. I've had it for 7 years, only once some loser tried to steal hydraulic brakes off my MTB, unbolted them half the way, got scared and ran away.

Just don't leave your bike alone for very long and always park it in a visible place or inside when possible
If you're biking to commute to uni or work where you will be leaving your bike alone for a while maybe you should ask for guarded bike parking or a locker
