I personally just wear pic related with khaki shorts and a light long sleeve cotton shirt and some sunscreen on my face. I've encountered a dude in a Keffiyeh and traditional Saudi clothing on the AZ trail before, looked comfortable enough if you didn't have to carry a backpack. I bring a gallon of water by default, 2 gallons if I expect the hike to last longer than 8-12hrs. Hottest temps I've hiked in for longer than 2 hrs was 115F (46C).
If you hike in more mountainous sections of AZ... 7,500 ft (~2300m) is the rough cut off elevation where temps no longer climb above 100F (38C) in summer and you'll want to also bring some warmer clothes if you stay at that elevation over night as temps drop 30° at night, same for the high deserts. My alpine hiking clothing for summer is usually cargo pants, average long sleeve shirt with a light under shirt, same hat and sunscreen (sunburns are actually easier to get at higher elevations due to thinner atmosphere and increased solar radiation).
