But since I do sharpening work on really expensive knives, both are good to have, I can objectively show the customer the angle I sharpened at, and how sharp their knife actually is. I send a composite picture like this one that shows both measurements. It actually helps people when they go to sell their high end pocket knives because they can show the buyer how good of condition it is. It sounds silly but when talking about $2,000 pocket knives, people often rather have the edge that came with the knife than a sharpened one, because it implies the knife was actually used lol.
