>>2331832>>2332087Diesels are your best bet then. I'd consider a VW or Audi 4WD estate with the 1.9tdi (cars are usually from 2004 and older) if you wanna off-road.
They're a bit difficult to find but there's good examples well under £2000 where I live, they're gutsy, get like 55+mpg (so 45 in America) and manuals are easy to find, some even have 6spd.
I would ignore CVTs if I were you. They're a difficult thing to get right and there's far more shitty ones than average ones, let alone good ones. You'll spend whatever you save in gas on repairs.
