Mule deer don't care are you smell because they're already so stinky they can barely smell you.
They get turned off by seeing or hearing you though.
Elk don't smell any more than beef cattle. So they taste more like beef.
But they have really sensitive noses and hate the smell of man. But don’t care about the noise you make as much.
Just marinade mule deer venison with vinegar or a couple spoonfuls of citric acid. That will take the game right out while preserving a venison flavor.
