First of all, the nominal optical resolution of V800 is 6400dpi, so 12800 is already a 2x digital upscale (aka marketing nonsense). This clearly shows in both your full frame scan, as well as the crop.
Second, the real, practical, tested resolution is about 2300-2600dpi. All manufacturers exaggerate their specs claims and this is no exception.
Personally I think you should be scanning at 2800dpi (or closest setting your software allows) max, this will still give you enough wiggle room for editing, but you won't be overshooting and storing too many redundant, interpolated pixels.
That said, this is a cool shot, it looks like it developed well, and you can see what incredible film stock this is even despite the scanner's shortcomings. Good luck, have fun and post more!
