Where you're likely getting a bit shafted is that most stores deving B&W use one developer for everything, and usually prioritise the developer that works fastest/is cheapest/I been usin it fer years never fails, ie Kodak D76. Gives great contrast and acuity, but big grain.
And then they scan it on an ancient potatoscanner designed for colour neg.
Pic related is HP5 in Kodak T-Max Dev, I use it because it never goes bad even when it's diluted and months old, not for any amazing image quality, but I think it gives a less grainy but softer image than D76. I scan with a camera, it's much better than labscanning b&w.
