All you're doing with two lenses that are equivalent in two format different sizes is projecting an image onto a surface.
That surface is subdivided into pixels or grain. Maybe you think higher resolution gives you better tonality in your image. A larger image circle with a lower crop factor isnt altering your OOF areas.
Try this thought experiment, say a GFX50R or S, and a 110mm lens, you take a photo of a subject. Then you take that lens and mount it on a A7rIII and take a photo from the same spot of the same subject, its a tighter crop. You have the exact same lens. You're not getting any different OOF areas. You're getting the same look. It would be the same if you took the GFX 50 image and cropped it a little. If theres a "medium format look" affecting the OOF area then youd expect the OOF area to look different on the FF sensor with the same lens and distance to subject. The OOF transition only extends a small area and not across the whole sensor, it is a lens characteristic, not a sensor characteristic.
