genuine question, whats stopping someone from just plugging in an ol' fullframe sony sensor to an sbc? are the schematics proprietary or something?

You know anon you could try this

Make a couple, hell document the process as best you can and release it as a "kit" that people can pull from listed suppliers. You'd have a lens mount system buttons and ready to go - good starting point!

well to be precise, its a hybrid integrated circuit if wikipedia serves me well or simply just an IC.
but what im trying to say is the lack of an soc on the component would make it easily possible to reverse engineer i suppose

It's not that simple, there are config registers for example that you will basically have to guess what they do.
And even then that's still one of the problems to solve. Not even one of the biggest even.
But there actually is already an open source camera project based on the RPi. PiCamera I think.
