Wtf is wrong with Lightroom? I always get this issue, and I can't find a fix. I've tried changing the RAW profile and it didn't affect anything.

Left is the file in Windows photo viewer, right is the same file in Lightroom. D7200 RAW files fwiw

I have the same issue with Lightroom. I used to have a canon eos 1300D/rebel t6 and it used to be fine, no issues at all but then I got a Nikon d7000 and then a Nikon Z6 and both of them suffered from the same issue as yours in Lightroom, and while it's shitty I still manage to cope. But it really gets in the way of DSLR scanning And it fucks up the scans for NLP. The only way I found of avoiding the issue is to import the .nef files first in Photoshop, export them unedited as .tif files and import those .tif files in Lightroom. And importing the nef files in Lightroom with the "copy as dng" option checked doesn't fix it either

Nothing, just you. The left jpg comes from the right raw already, all the same information is there. You just actually have to process your RAW if you want them to look good, this includes more than just changing the profile.

change your color profile to something neutral, you are problably using Adobe color by default, it oversaturates everything

The jpeg is made with a profile that typically lifts the shadows and brings down the highlights, so go to the exposure tabs and do that as a starting point.
