I love this shot but it was done on my shitty 5 yr old iphone 8 before i got a camera. any suggestions on what I could editing wise?

If it’s a jpeg that’s pretty much as good as it’s gonna get, the image information is basically “burned in” and you won’t get much from editing it. iPhone 8 can shoot raw, but only with 3rd party apps which likely you aren’t using. Sorry bud.
