OP, basically.
The GFX50R is going to have a better MTF curve and higher FWC (=better colors and DR if you ETTR) than a ~50mpish FF but given the same exposure, due to the gapped microlenses, the SNR will be very close to FF and the MTF curve will drop as you stray from the base ISOs, so the real advantage to using this clunky POS is limited. Also, the gapped microlenses somehow make it alias like fucking crazy. The crop factor is half as far away from FF as APS-C is so a little technical hit like this can make gfx50 files look identical to Z7II/R5 ones in most shooting conditions.
Ideally you should be rocking a more modern sensor with gapless microlenses to get the full benefit of MF rather than JUST slightly crisper foliage, maybe more light gathering if you give it more light,... and somehow more aliasing than 42-50mp FFs. The GFX100S and GFX100II are absolute FF killers, upgrade ASAP. If you can swing for a recent 54mm sensor, do so, immediately.
If none of this makes sense to you, ditch medium format and go back to APS-C. If it makes sense to you, you're returning that and buying a better sensor MF, canon R5, or Nikon Z7II.
