If I recall last year in my head, I tend to go event by event as opposed to thinking January, then February, etc. You can also group things by activity type beforehand, but I don't find it that necessary. I also have either quarterly or semi-annual folders for general snapshittery (dog walks, bar nights, etc), as well as a Test / Misc folder strictly for RAW shenanigans with downloaded files.
I also suggest keeping your Output folders nested with the input folder. So if you go to Lastname Wedding, you can quickly see either all the files in RAW processer, as well as your finished files. When going back for files, I almost never need to find the RAW, just need to find what I exported. I used to export to various drives or even the desktop, but then things get shuffled around and annoying to find.
