In fact, this doubles over because mozzarella is high in moisture while not being acidic. If you grill Halloumi, it really won't melt but release water, that's because its high in acidity.
Resting temperature also matters before melting. Its not actually a bad idea to leave out some cheese if you're planning on eating it, it'll taste better and the texture will compliment.
