I would say that sitting down at a site of grace also refills it and should heal your wounds and since ingame there is no actual time spent when sitting down at a SoG you won't need to spend actual time either. Sitting down will just wash the Grace of the Erdtree over you for a brief moment and then your injuries are healed , flask is refilled and enemies respawn.
Btw. I don't have any hard rules for rolling dice, more gut feeling and what's appropriate: anything >=50 I consider generally a success but the 40-60 range is more of a neutral outcome. The more advantages and tricks you get on your side, the less the roll actually matters and the more neutral the situation is, the more the roll matters. If you're hopelessly outmatched, the roll won't do much but prolong survival a bit. E.g. rolling a 95 while 1v1ing the Tree Sentintel in a head on duel doesn't mean you'd be able to defeat him in your current setup.]
You both sneak up on the griefing Tree Sentinel and Sunbro gives him a good opening strike on the back of the head with his pick. Any normal human would not be able to remain concious after such an attack but this "man" is huge and something.
Still, it leaves an opening for Hes to follow up with his flail... but the attack didn't feel as effective either.
