>>6667902Same reason why people prefer animatronics, matte paintings and proper sets instead of greenscreens and CGI: You know all that stuff is there and therefore interacts better with the products and you COULD recreate it if you had the talent, bricks and scale model materials.
There's also a certain "this is what you could do with your bricks and the sets lumped together" aspect to that art while most of the stuff these days is "this is what you get in the sets and where the shooting functions are".
