Moon Knight has a ton of great comic runs, more than people give him credit. His '79 backdoor-pilot comic issues and his original early-80s comic run are great, if you like comics from that era/don't see their writing as dated. Personally I love them and the tone they have, very Batman-y noire feeling (fitting since the creator, Doug Moench, actually went to write Batman immediately after this lol). He also wrote a couple mini-runs in the late-90s, which if you're gonna read anything by Moench, read that - they're fantastic, and don't suffer as much from late70s/early80s overly-expository comic writing. The art is fantastic and mood as good as ever.
Havent read the Marc Spector: Moon Knight run, so form your own opinion ofc, but it's berated pretty bad as an awful run by fans. Again, I wouldn't actually know myself yet.
Many people are big fans of the 2006 run, but personally it wasn't for me; very cynical and obsessed with being edgy for the sake of edginess. For example, they retconned Marc's partner Frenchie into being gay for the sole purpose of making Marc look like an even worse person for treating him like shit, and none of the future comics ever figured out what to do with Frenchie afterwards really. Give it a try, you might enjoy it more than I.
Most obvious recommendations are the first six 2014 issues by Warren Ellis, and the 2016 Lemire run - if you want a taste of the character, try these out and maybe the late90s Moench mini-runs.
As for other notable runs, I found I enjoyed the Max Bemis run a bit; it's not perfect, but if you wanna see something lighthearted/goofy in tone out of MK, it's not too poor an experiment.
People also are praising the current run a lot, but I haven't gotten to it yet myself, so maybe try it out.
