High Grade kits run around $15-$20 depending on model, are 1/144 scale and generally stand around 5 inches tall. Master Grade kits are around $30-$40, are 1/144 scale and stand closer to 7 inches tall. Both kits will present your daughter with a fair amount of parts to assemble, but assembly itself is quite simple (like putting together a puzzle, but with instructions). The only tool she'll really need are a pair of clippers to remove parts from the sprues. Also, if you're in the US, a nice bonus is that you can walk into nearly any hobby store or Barnes & Noble and find gunpla on shelves.
The folks over at the Gunpla Thread should be able to give you guidance on recommended kits, particularly ones that may give your daughter more options to customize out of the box:
