1) Let's Go Pikachu & Eevee are set parallel to each other. You are a rival to the "other games" main character. So the actions and routes you take are different between games, however, your rival takes the route demonstrated in the other game. Which is why you will be the first one to beat certain gyms or the 2nd one to reach them.
2) The capturing mechanic is similar to Pokemon Go in the sense you are given a throwing mechanic, however, Pokeball's thrown aren't used up if they miss since you can pick them back up again. How you throw the ball changes the rate of capture slightly, making it easier to catch Pokemon once you learn the best place to throw the ball at them. The Masterball doesn't share the same mechanic, instead, it's a short animation that has your player throw the Masterball in a more climatic way. The Masterball animation will be automatically recorded as a video in-game which can be shared online to show to your friends on social media.
3) The Safari Zone returns and is expanded with new Terrains to capture more Pokemon; including Alola Form Pokemon. The game is now a fusion of the new capturing mechanic, with an additional function to throw berries to attract new Pokemon. Certain berries increase the chance for rarer Pokemon while also providing a new method of shiny hunting.
4) The Elite Four is now a tournament where you face other trainers who attained all 8 badges. The first run in the story will be story focused, while the second run will feature trainers you fought during your original journey. In the story-run, the surprise final fight before challenging the champion is Red who is participating to reclaim the title of Pokemon Champion. The current Champion turns out to be Gold from Generation 2.
5) Team Rocket returns under Giovanni, who turns out to be the Giovanni from the Rainbow Rocket storyline in USUM.
6) Ice Type loses its weakness against Fighting types.
