Otherwise it's probably a fetish. If you think he's found out how to do it safely, might as well give it a go, but if not, he might be placated by opening up like you're going to, biting over his shoulder, and laying on him.
And of course, if you don't care all that much for him, you can just eat him. There's no downside in that scenario; humans often taste good.
